I am so excited about all things peppermint this year! In the last couple of weeks since all of the Christmas merchandise hit the stores, I’ve bought candy cane lollipops, peppermint baking chips, chocolates with candy cane bits, mini candy canes, peppermint nougats, peppermint puffs, peppermint patties and even peppermint coffee creamer. Not to mention that my house already smells like peppermint because of the Peppermint Pampering Gifts In A Jar that I made. Seriously, every time I open one of the containers of Peppermint Body Butter, I want to taste it (even though it is NOT edible) because it smells so good ! So, this led me to making something edible with peppermint and I decided on something really easy: Peppermint Patty Stuffed Ritz Crackers. They are even easier to make than the peanut butter dipped Ritz crackers because you don’t have to spread the peanut butter on the crackers. Just plop a York Peppermint Pattie between two crackers, warm it for a couple seconds and you are ready to dip ! Place unwrapped peppermint patties on top of Ritz crackers on a microwave safe plate. Top them with another Ritz cracker. Place them in the microwave for a couple seconds (5-8 seconds for my microwave) to soften the peppermint patties. Don’t microwave them for too long or the mint filling will become liquid and yes, I know that from experience. Gently press down on the crackers until the peppermint patties are about the same size as the crackers. This makes them easier to dip and it makes the crackers stick to the chocolate part of peppermint patties. Melt some chocolate CandiQuik, dip the peppermint patty sandwiches into it and place them on a silicone mat or parchment paper. Crush some peppermint candy canes. Sprinkle the crushed candy canes on the dipped cookies before the chocolate sets. Then, go ahead and do it with vanilla CandiQuik. See if you can resist eating one before the chocolate hardens!
